Chinese noodles à la Lorena
Ingredients
- 1 chicken breast, cut into small pieces
- 2 cups of boiled broccoli (in small florets)
- 1 cup of flat peas
- 1 red onion, cut into large pieces
- ½ cup of red pepper, cut into long strips
- 3 chopped stems of spring onion
- A piece of ginger, cut into medium pieces
- 3 cloves of garlic
- ½ cup of chicken broth (or water)
- 4 or 5 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- 2 teaspoons of sesame oil
- 2 tablespoons of cornstarch (maizena)
Preparation
In a bowl, mix the chicken pieces with soy sauce, oyster sauce, and sesame oil. Let it marinate for around 20 minutes. Then, heat oil in a pan and start frying the chicken. When you finish, remove the chicken from the pan and, in the same pan, add a bit more oil and add half of the red onion, ginger, and garlic. Add 5 additional tablespoons of soy sauce, the chicken broth or water, and an extra teaspoon of oyster sauce and sesame oil. In a cup, mix a bit of water with the cornstarch or maizena mix it and then add it to the pan to thicken the sauce. Let it cook for a couple of minutes. Then add the red pepper, the other half of the onion, the spring onion, and the broccoli. Now it is ready to be mixed with the noodles!
